* Can opener blade and arm area above clean mixing bowl have dried-on food debris. Items cleaned.

* Unapproved plastic bucket used as ice bucket. Discontinued use.

Logan's Roadhouse, 3050 Riffel -- Jan. 17

* Onion slicer, lettuce slicer and large slicer have dried-on food debris. Items cleaned.

* Mashed potatoes in hot holding not hot enough. Microwaved to reach acceptable temperature.

* Fish and corn dogs in reach-in cooler not cold enough. Quick-chilled in walk-in cooler.

Braum's Ice Cream, 656 S. Ohio -- Jan. 18

* Sleeves used for cleaning shake machine have dried-on food debris on surface. Cleaned.

* Two salads in reach-in cooler are not dated. Dated.

Mokas Coffee, 916 E. Crawford -- Jan. 18

* One open package of raw bacon stored on top of sandwich wraps, and several other packages stored above crockpot full of gravy. Bacon packages moved.

* Open bags of chicken and chicken salad not date marked. Chicken dated, chicken salad disposed.

* Packages of coffee equipment cleaner stored above food storage bags. Cleaner moved to chemical storage area.

Salina Country Club, 2102 Country Club -- Jan. 18

* Salad plate on clean dish rack and noodle maker on clean equipment rack both have dried-on food debris.

* Meatballs in reach-in cooler outdated. Disposed.

* Spray bottle of clear liquid not labeled with common name. Labeled sanitizer.

* Spice container above meat drawer area has cracked lid and melted side. Removed from use.

Kansas Wesleyan University Cafeteria, 100 E. Claflin -- Jan. 19

* No violations.

The Scheme, 123 N. Seventh -- Jan. 19

* Cheese, sausages and ham slices in cold holding not cold enough. Chilled.

St. John's Military School, 110 W. Otis -- Jan. 19

* Dishwasher did not wash hands between handling dirty dishes and clean dishes. Instructed.

* Topical burn ointment stored above food prep table. Moved.
